I accidentally connected my e-bike charger to my laptop and it shut down instantly. Now, it won't turn on at all. Am I completely out of luck here? Is this something that can be repaired?

As a small repair shop owner, I’d say if you fried the power management part of the board, it might still be worthwhile to repair unless it’s really bad. And if your laptop is under warranty, you might get away with telling the manufacturer it just won't turn on!
Try this: open up your laptop and disconnect the battery. Once that's done, reconnect the battery and see if it powers on. If it still doesn’t work, reconnect the battery, but this time use the correct charger. If it’s still dead, you may need a new motherboard, but that could be an affordable fix depending on your laptop model.
Everything can be fixed, but finding the right shop to do board repairs can be tricky. You might have fried a component on the motherboard, which is typically the part that needs repair. Just keep in mind that repair costs can sometimes outweigh the value of the laptop itself.
It's a good idea to see what type of charger you're dealing with first. Some e-bikes use barrel jacks, while others utilize USB-C. If you share a picture of the charger data plate, it might help clarify what happened to your laptop.
Sounds like you probably damaged the input circuit—possibly the fuse or another component. You should definitely take it to a professional repair shop to get a proper diagnosis.
Aventon bikes use barrel jack chargers, so that could explain the mix-up!
