I haven't settled on a case yet either. I also debated between a GIGABYTE and an ASUS ROG motherboard, but the ASUS is quite a bit more expensive. Is the extra cost worth it, or would a B850 board be a better choice? Any input would be greatly appreciated!

Your setup looks pretty over the top. You could save around $1000 and still get about 15% less performance. I’d definitely reconsider the 5080; it's overpriced at $1000—$1800 is way too much!
I saved some cash by switching out the motherboard, RAM, SSD, and PSU in my build. You don't need the super high-spec x870 motherboard. I went with RGB DDR5 6000 CL30 RAM, which is great, and a basic 1000W PSU that meets all the requirements. Have you thought about the 5070 Ti instead? It’s over $600 cheaper and barely drops your performance.
That’s solid advice! Is the RAM I picked not worth the price difference? And can you explain what you mean by a dram-less SSD?
Regarding the PSU, is that one you recommend reliable since it’s on the lower price end?
