I'm looking to build a budget AM4 system for my brother using my old 6700k build's 4x16 RAM sticks (2133/2666 CMK32GX4M2A2666C16) and a GTX 1080. I was thinking about going with a Ryzen 5600X CPU since it seems to be a good option right now. However, I'm having a hard time deciding on a motherboard. Should I just go for a dual-slot motherboard and limit the RAM to 32GB? If so, which motherboard do you recommend?

Honestly, I'd skip the AM4 platform for now. If you're in the US, you can get the Intel 14600K for around $160, which is a solid option. I mean, just look at the offers on components that come with it, like a B760 motherboard and 16GB of RAM, which could make your build much more future-proof!
Any AM4 motherboard should work for your needs, so just choose one that fits your budget. As for RAM, unless your brother is doing something super intensive, 32GB should be more than enough for gaming and everyday tasks.
