Best GPU for My New Gaming Build?

I'm in the process of putting together a new gaming setup and I've got almost everything figured out except for the GPU. I haven't kept up with the latest news and releases lately, so I could really use some guidance! I'm aiming to play games at 1440P with high to ultra settings like Oblivion Remastered, GTA 6, and Warhammer 3.

Here are the specs of my build:
- CPU: AMD Ryzen 7 7800X3D
- Motherboard: Gigabyte B650E Aorus Stealth Ice
- RAM: 2x32GB DDR5-6000 CL30
- Power Supply: Seasonic Vertex 1000W
- Case: Lian Li 011 Vision Compact ATX

Now, I'm on the lookout for a GPU that pairs well with this setup and I'm hoping to keep it under €1,000. Some options I've come across include:
- Sapphire Nitro+ 9070 (€750)
- Sapphire Nitro+ 9070XT (€950)
- ASUS TUF RX 7900XT (€790)
- Sapphire Nitro+ 7900XTX (€1,060)
- MSI GeForce RTX 5070 Gaming Trio (€760)
- ASUS TUF RTX 5070TI (€1,050)

Any recommendations? I feel a bit lost since I haven't been following the developments over the past two years!

Have you checked out Caseking and Proshop since you're in the EU? Here are some pricing suggestions I found:
- Around €580 for the RTX 5070
- About €700 for the RX 9070 XT
- Roughly €800 for the RTX 5070 Ti
- Close to €1,000 for the RTX 5080

I currently have a 3070 and it's struggling on 1440P with medium settings for Oblivion Remastered. I'm not sure how it would handle GTA 6 when it comes out. Is the 9070XT a better choice for upcoming games, or would the 5070 suffice and save some cash?

Thanks a lot! I checked those sites and found better prices for the cards. I’m torn between two models now:
- Zotac GeForce RTX 5070 AMP White (€680)
- Sapphire Nitro+ RX 9070XT (€850)

Which one do you recommend for that price?
