I'm looking to upgrade my graphics card to play older AAA titles like Assassin's Creed Origins and Odyssey at 1440p with ultra settings. My goal is to achieve above 60 FPS while streaming to an older TV using an Apple TV and Steam Link. Currently, I have a 12700k processor, a GTX 1060, and 32 GB of DDR4 RAM. Right now, when I try to run Odyssey at 1440p ultra, I only get around 35 FPS and it's pretty choppy. I've been considering GPUs like the B580 and RTX 5060. Would these work, or do I need to look into getting a 5070?

You can find 3080s frequently for $300-$350, even the 12GB models. It's a bit overkill for now, but you'll have great headroom for the future. The 5060 Ti 16GB is also a fantastic choice for a new GPU.
If you're considering newer games too, the 5070 is a good bet. You could also check out the 9060 XT 16GB or the 5060 Ti 16GB for peace of mind. They should handle everything well.
The RX 7600 with 8GB should do just fine for most games at 60 FPS. I opted for the 9060 XT 16GB myself; great choice!
A RTX 3070 would be perfect if you're aiming for 60 FPS. It's more than capable for what you're playing, and you can find it for a reasonable price around $210-$230 on sites like eBay.
