I'm wondering if there's any way to change the date on a Gmail message I'm about to send. If I send it today, is there a way to make it appear as if it was sent yesterday, or at least make it look like it was?

Nope, not possible. The way email systems are set up, they track the timestamp when emails are sent.
Unfortunately, you can't change the date that appears on an email. The receiving end shows the actual time it was received, not what you want it to say.
That's just not how email works. The sender can’t alter the date shown to recipients, since it’s based on when the server processes it.
I’ve seen some emails dated for future years, like 2029. Is there a trick to that?
