I've recently updated to iOS 26 and it's been draining my battery like crazy. My iPhone shows that my last backup was on June 3rd. If I create a new backup now (on June 12), wipe my iPhone, and then restore from my backup, will I be downgraded back to iOS 18?

Short answer: No, you can't restore an iOS 26 backup to iOS 18. The best path is to save your photos elsewhere and then do the downgrade after wiping your device.
When you're on a beta version like iOS 26, battery issues can be common due to extra logging and overall instability. Unfortunately, if you back up your phone now, it will be tied to the newer iOS, and you likely can't restore it back to iOS 18. For any photos taken after your June 3rd backup, make sure you either have iCloud Photos enabled or manually transfer them to a computer. Once you've done that, you can then wipe your iPhone and restore from the iOS 18 backup you made earlier.
I wouldn't bother with the downgrade since new backups won't work with the old version. You'd need to find a way to keep your new photos safe, like using iCloud or transferring them to a computer first. After that, wipe your phone, and you should be able to go back to iOS 18 without any issues!
