I'm looking to set up a 27-inch 2K monitor primarily for production work, and I'm considering whether the Ryzen 7 5700G can manage this on its own without a dedicated GPU. I'm also hoping to do some casual gaming on the side. Will the integrated graphics be sufficient?

It really depends on what kind of production work you're doing. Some tasks require more GPU power, and for serious gaming, the 5700G might not cut it at all.
The integrated GPU on the Ryzen 7 5700G is somewhat on par with a GeForce GT 1030, so you can definitely check how that performs in games to gauge what to expect.
For simple 2D and very old 3D games, you should be fine. Just list out the specific games you're interested in for better advice.
You can manage some older and less demanding games, like Solitaire, Civilization V, and the Fallout series, at lower settings. Just be prepared for around 15-20 FPS on heavier games like Witcher 3—it's definitely not ideal for those.
