Choosing Between 24GB and 32GB RAM for Video Editing

I'm in the process of building a high-performance video editing rig and I'm wondering whether I should go with 24GB RAM sticks or go for 32GB sticks. I've noticed that some brands like G.Skill only offer 24GB sticks at higher speeds (8000+). Is there a significant difference between the two in practical use? Also, how important is RAM speed? I'm comparing 7600 MHz to 8400 MHz. My setup will include DaVinci Resolve, Affinity Publisher/Designer, and Firefox, with everything running simultaneously. I'm considering using a top-of-the-line GPU like the 5090 or 7950, and I'm thinking about having around 64-128GB of RAM overall. Any advice on the RAM specifically or the build in general would be awesome!
