I'm seeking a backup solution for Microsoft 365, particularly for Exchange. I've reached out to Veeam, but they informed me that stored backups can only be kept in Azure, which doesn't sit well with me. I feel like it's not a great idea to keep backups in the same environment where the data is coming from, as it seems similar to backing up data from a NAS onto that same NAS. I'm really looking for a way to manage Microsoft 365 backups outside of the Microsoft ecosystem. How do you all handle your backups? Also, I'm considering checking out Nakivo for their options.

You can definitely save backups locally if you're self-hosting. It seems there might be some confusion with Veeam's core product versus its Data Cloud version. While SMB shared NAS might not be supported, exposing it through iSCSI and mounting it on your server could work just fine.
I've actually been able to store our 365 backups locally using Veeam, so I'm not quite sure why they told you that. Maybe there's been some misunderstanding or miscommunication.
I wouldn't recommend using iSCSI with a NAS, though. Sure, it works, but trust me, you'll have a rough time managing it in the long run.
