I think I've shorted out my laptop's motherboard while trying to upgrade the RAM and SSD. I'm pretty sure it's toast now. My question is, will my RAM stick or my M.2/SATA SSDs be damaged from this? Has anyone experienced something similar, and were you able to salvage your components?

Before worrying too much, how did you determine that the motherboard is shorted? It’s pretty important to have removed the battery and drained the current before making any upgrades. Did you follow those steps? The RAM and SSD might still be fine, depending on how it shorted out.
I had a similar situation a while back, and my SSDs were still good, but it really depends on how the short happened. If you managed to completely drain any power and removed the batteries, you might just have some luck on your side. I'd say give them a try in another machine if you can.
