I removed one of the black protective covers from my GPU's display port to connect a display, but I left the others on. Is this okay or should I remove them all? Someone mentioned that the plastic could melt due to high exhaust temperatures. Is that a real concern or just an exaggeration?

You’re fine leaving them as is. If your exhaust temps are hot enough to melt plastic, you’ve got much bigger problems going on in your PC!
You can definitely leave the covers on. Just keep an eye out, as sometimes they can get stuck between the GPU and the case when you try to remove them later.
I’ve had mine in place on a pretty warm RX570, and they’ve held up perfectly fine. No worries there!
If melting is a concern for you, just avoid plugging any cables into that port to be safe. Better to be cautious!
