I'm trying to understand RAM CL numbers better because I've seen some sticks rated at 6000MHz with CL30 and CL36, and honestly, I'm a bit confused about it all. I've heard people talking about these differences in nanoseconds, and it seems a little ridiculous to worry about. Should I just focus on getting the fastest RAM possible?

You really don't need to stress about it too much. The difference in performance is pretty minimal. If you want to grab something that works without getting into the details, just go for a solid option. It's just a slight speed increase, nothing to lose sleep over.
But can you even notice a difference of 12 nanoseconds? That seems almost negligible!
