I have a UK SIM card and I'm currently in France. I'm trying to understand whether my phone number still uses the UK country code (+44) or if it changes to the French code (+33) while I'm here. I couldn't find a clear answer online, so I'm hoping someone can clarify this for me. Thanks!

Your number remains the same, so it will still be +44 xxxxxxxxxx even while you're in France. If someone wants to call you from France, they'll need to dial +44, which means they could be charged international rates.
