I have an Apple account linked to an email and password, but I can't access the associated phone number anymore. I used this account previously with an iPhone, but now I want to set it up on a new iPad. Unfortunately, every time I try to log in, I'm prompted for verification through that old phone number. Is there any way to bypass this requirement? It seems frustrating that a phone number, which feels less secure than my email and password, is an absolute must for access.

I understand the frustration. Using the recovery link doesn’t always work if they’re asking for the old number right away. You might need to contact Apple Support directly; they have other options they can try to help you get back into your account.
You might want to try Apple’s account recovery process. There's a support page that details how to go through recovery, which might allow you to regain access without needing that phone number. Just keep in mind it can take some time. Here’s the link: https://support.apple.com/en-ca/118574.
