I'm using an HP 255 G10 Notebook for work, where I remote into my office PC. At home, I have a solid setup with two monitors connected to my desktop via DisplayPort cables. I recently bought an Anker 8-in-1 USB-C hub to connect my mouse, two monitors (via HDMI), and a charging cable through the USB-C port. Unfortunately, it only recognized my mouse, which makes me think it's a compatibility issue—since it worked fine with my MacBook. It seems like my laptop's USB-C port doesn't provide display power. Right now, I'm using one HDMI monitor with the charger plugged in. What's the best way for me to use both monitors? Should I get a USB-C to USB-A adapter, or do I need a docking station with DisplayLink technology for my USB-A output?

The ability of your laptop's USB-C port to function with a hub depends on its specifications.
