It's totally normal to forget terms even when you know how to do something. To help with this, try writing down the steps for tasks as if you're creating a tutorial. This will force you to use the right terminology, and you'll be better prepared for interviews.
Practice makes perfect! Think of a specific interview question you struggled with, then practice answering it multiple times until you feel confident. The more you rehearse, the easier it becomes to articulate your thoughts.
