I'm looking to move a domain and one mailbox from our Office 365 tenant to a personal account for an owner who's departing the company. What's the best way to approach this? Should I create a new Office 365 tenant using his personal Gmail and then use a service like BitTitan for the mailbox migration? I'm fine handling the domain transfer later since we have that managed through our GoDaddy account. I'm primarily focused on migrating just the mailbox and since there will only be one mailbox, is there a simpler service I can use for this? I've never done this kind of migration before, so any advice would be appreciated!

You can start by creating a new Office 365 tenant and have the owner add his card to it. Purchase one Business Basic license, and then either upload a PST file of his current mailbox or use the built-in migration tool in Office 365. You won’t need to use any third-party service to move just one mailbox. Once that's done, transfer the domain into his GoDaddy account and he’s all set!
This is a pretty uncommon situation, but in case you want alternatives, Veeam has a backup tool for Office 365 that you can use. It’s free for up to 10 mailboxes in the community edition. You could backup the mailbox, then export it to a PST and hand it over on a USB stick once done. It might take a bit more effort, but it’s a solid option if you’re looking for a free solution!
