I bought a new iPhone 17 for my mom, and she created a new Apple ID but forgot the password. Now the phone is stuck in activation mode. I've submitted an activation removal request to Apple with all the necessary documents, including the receipt. Does anyone know how long it typically takes to recover the iPhone?

Activation Lock removals usually get processed in under a week, as long as everything you provided is accepted. Once it's done, you'll just need to factory reset the phone using a computer, and it should be good to set up.
I just have to use iTunes for that?
