I've been wondering if 32GB of RAM is sufficient for gaming while also handling some light editing work. I don't do heavy editing, so I'm unsure if I should invest in 64GB instead. Also, if I choose the 32GB option now, is it easy to upgrade to 64GB later on?

For gaming, 32GB is generally plenty, especially since most games don't require more than that. If you're just doing light editing, you should be fine. However, if you do any heavy multitasking or plan to edit more in the future, going for 64GB could be a good idea. Upgrading later can be tricky since you'll likely need to buy a new kit instead of just adding more sticks, depending on your motherboard.
Honestly, you shouldn't need 64GB unless your workflow is really demanding. A few years back, 16GB was the standard for most gamers! If you’re just gaming and doing a bit of editing, 32GB hits the sweet spot.
That's why I opted for 64GB right away too. It saves the hassle of selling old sticks later.
