I'm considering using DDR5 RAM with a speed of 7200MHz and a CL34 latency for my 7800X3D processor. I'm a bit confused about stability and how important it really is, but I know this RAM has a good latency rating. Does anyone have insights on whether this setup would work well? I'm using the GIGABYTE B650M GAMING PLUS WIFI motherboard, by the way.

In practical terms, it's unlikely that you'll get that RAM to actually run at 7200MHz. For most workloads, you also might not see a huge performance boost with that speed anyway, so it could be more logical to consider other options unless you're really aiming for that speed.
If it's your cheapest option at 370 CAD from Newegg, why not go for it? Just keep in mind that while you might not reach 7200MHz, you could potentially get it working around 6000MHz. Even if it defaults to something lower like 4800MHz, the 7800X3D isn't heavily affected by RAM speed, so it'll still perform decently.
