The catch is, I'm having trouble finding it at a reasonable price. I'm also considering a model with only 8GB of VRAM but I'm unsure how much performance I'd sacrifice compared to the 16GB version. I know my motherboard (B450 Tomahawk Max II) might impact performance, but can someone explain the differences in performance between the 8GB and 16GB options?

You don't want to run out of VRAM, or else your game will start using system RAM which is much slower. If you're serious about gaming, definitely consider the 16GB options. Running out of VRAM can really mess up your gaming experience with stutters and load failures.
