I'm thinking about getting a GPU to hit 180fps at 1080p for Fortnite and Strinova, ideally on low settings. The 5700 XT looks good, but I'm curious if there are any cheaper alternatives that might work just as well.

Honestly, I'd steer clear of the 5700 XT if possible. It’s starting to show its age after about 6 years. I had one myself, and I think looking at newer models like the RX 6600 or RX 6600 XT could be a better investment since they'll likely last longer.
It really depends on the price you can find the 5700 XT for. If it's too steep, you might want to consider alternatives that offer similar performance without breaking the bank.
I'm not too worried about age since I usually play on low settings and just stick to a couple of games, so I'm good with that level of performance.
