I'm building a high-end PC featuring an RX 9070 XT along with a Ryzen 7 9800X3D and 64GB of RAM. I'm considering whether to get 2 or 3 monitors. Can my setup handle three 1440p 240Hz monitors, or would it be wiser to just stick with two?

It really comes down to what you need to do. For most gaming scenarios, two monitors should be enough: one for your game and another for things like music or Discord. If you're also focusing on productivity tasks, then a third monitor might be useful, but make sure it fits your needs without overcomplicating things.
Are you planning on gaming across all three monitors simultaneously? If not, you might not need that many. Having two could be more than enough depending on your usage.
You might even want to consider a super ultrawide monitor; I switched from a three-monitor setup to a two-monitor setup and I'm loving it. It allows for more window management without the hassle of bezels getting in the way. Experimenting with two similar monitors first could also help you decide if a third is necessary later on.
