I'm new to Linux, so sorry if this sounds like a silly question. I'm wondering if running Docker on a Synology NAS is safer than on an Ubuntu machine. My thought process is that the NAS has automatic updates and isn't handling many other tasks, while I have Ollam running on my Ubuntu box. What do you think?

It really comes down to which provider you trust more: Canonical (Ubuntu) or Synology. Ubuntu gives you the flexibility to run the latest Docker versions and whatever you want on it. With Synology, you might be limited in what they allow you to do and the Docker version they offer.
I wouldn’t recommend it. Synology's Docker implementation feels pretty limited. They have a simplified container app that doesn’t have all the features you'd expect, and they often run older versions of Docker. You might miss out on some important updates or capabilities.
