Do you think I should consider a less expensive GPU for now and upgrade later? Are there other components where I could save some money while still leaving room for future improvements in both aesthetics and performance? Thanks in advance!

Looks good overall! I would suggest not going too cheap on the GPU since it'll affect your gaming experience, especially with the titles you mentioned. If you're not using ray tracing much, you might consider the RX 9060 XT instead of the 4070 for better performance in something like Minecraft, plus it usually offers more VRAM.
I think your build is solid! That Ryzen 7 7700 is a great choice and delivers excellent performance for its price. Just be cautious with the SSD – the TBW is pretty low on that Crucial E100. For a bit more money, you can find SSD options with 3 to 4 times the endurance, which can save you headaches in the long run.
