My main question is whether these processors are still adequate for demanding creative workflows in 2026, taking into account overall user experience and not just raw performance metrics like rendering speeds.

You absolutely need more RAM. Aim for at least 32GB, and 64GB if you're working with large files. The 12-core systems like the Ryzen 9 will help, but if you're mainly using Photoshop, you might find that a Ryzen 5800XT does just as well since it doesn't fully utilize more than 8 cores.
