I'm curious about what people think of building a PC with the 5060 Ti 16GB graphics card. Do you believe it will still be able to handle new games that are released in the next five years? I heard it's a great balance of VRAM and cost compared to other Nvidia GPUs. What do you think?

It all comes down to your resolution and what performance you're aiming for. If you aren’t expecting to max out graphics on everything, you should be fine. Features like DLSS can also help your GPU last a bit longer, but the future is hard to predict when it comes to game demands.
Generally, 60 class cards aren't built to handle the latest AAA games for long. Typically, if you're getting 1440p at high settings and 60 fps now, you might have to drop settings to medium or lower your resolution to 1080p in about a year to keep up with new releases. After a couple of years, you'll be looking at lower frame rates and settings. So consider how long you want your GPU to last when making your decision!
In five years, you might be looking at games running at 900p. If you can, you should aim for at least the 5070 Ti or 9070 XT instead!
It's tough to predict. Games are becoming less optimized at a rapid pace, and at 1080p, I doubt it will remain powerful enough. In five years, without some AI assistance for upscaling, I can't see it being a solid 1440p option anymore, though hopefully, developers improve their optimization. It could be an issue for many cards, not just this one.
You'll likely be able to play new games in five years, but expect to adjust the graphics settings to something less than optimal.
I doubt it will be powerful enough for something like GTA 6.
