I'm looking to upgrade from my Ryzen 5 3600, which I've paired with an RTX 3080, to play Counter-Strike 2 at 1440p on a 180Hz monitor. Right now, I'm only getting about 100 FPS at 1440p. I found that I can buy a Ryzen 5 5700X for €110 or the Ryzen 5 5700X3D for an additional €100, totaling €210. I've heard that the larger cache on the 5700X3D could improve performance in CS2, but is it really worth paying almost twice the price for it?

I'd say go for the 5700X. It's going to save you some cash unless you can find the 5700X3D or 5800X3D at a good discount. The 5600X3D is another option, but it's been tough to track down on sale.
