I'm currently using a 7900XTX to play games exclusively at 4K resolution. I'm considering whether upgrading to a 5080 would be a worthwhile investment. What do you think?

For $1400 and only 13% better performance, I'd consider waiting for the 5090 instead. There's a bigger jump in performance for a similar cost if you can spare about $3.5k.
Honestly, I’d recommend waiting a bit longer for the next generation GPUs. If you're not in a rush, it could save you some cash in the long run. Unless money is no object for you, this upgrade seems pretty pointless.
The performance gain is around 15%, but you're spending a lot for that. It might not be worth it for the price.
Any idea when the new ones might drop? I'm just waiting to see what the next best thing is.
