I've got a 3080 Ti and a Ryzen 5600X. I've heard that upgrading to a 7800X3D would really boost my performance. But is there a better option out there, or is this overkill?

Honestly, it might be overkill. If you can afford the upgrade, go for it! But a 5700X3D would still work great with the 3080 Ti, and your 5600X isn't really holding you back much at higher resolutions, so consider that before you decide.
