I just built a new PC with a Ryzen 7 7800X3D after previously using an i7 7700. I had three NVMe M.2 drives connected to the old system. I wiped one of them to use as the boot drive for the OS on my new setup, while the other two M.2s still contain all my old data. After booting up the new PC with just the OS M.2 installed and then adding the other two later, they appear to hold all the data, but I can't access any of it. What's going on?

It sounds like the drives might not have the right permissions or drive letters assigned after the switch. Check if they show up in your file explorer and see if they have a drive letter assigned. If not, you can go to Disk Management to assign one manually. Let me know how that goes!
I'm still figuring things out since this is my first build. Could you clarify what you mean by drive letter? I can see that the drive is recognized and shows storage used, but when I try to launch a game that I know is installed, it doesn't show up anywhere. Do I need to do something else?
