I'm planning to upgrade from my current GPU, a 2060 Tweak Series II OC edition with 6GB of GDDR6 memory. I need a graphics card that can smoothly run two monitors at 1440p each without overheating or lagging. My budget is between $500 and $600. Any recommendations?

If you're looking for something strong, the RX 9700 XT would be an excellent choice. It's definitely capable of handling dual 1440p monitors.
