I've recently got approved for AWS and I'm on the hunt for a drag-and-drop email builder that allows for customizable 'unsubscribe' features. The options I've found so far are so pricey that they defeat the purpose of using AWS in the first place—at that point, I might as well stick with Mailchimp! I'm planning to send out 1 or 2 emails a month to over 40k subscribers. Any suggestions?

Honestly, for what you need, you might just be better off with Mailchimp or SendGrid. With AWS SES, it sounds like you’d mostly just be trying to build a similar system to those services yourself.
But isn’t there something out there that fits my needs? I checked out Mailbluster, but their unsubscribe form is static. There has to be something more customizable, right?
