Your build looks solid! You might want to consider upgrading the motherboard a bit since a basic B850 might limit the high-end performance you're aiming for, though it should still work fine. Also, there's really no need for more than 32GB of RAM for gaming unless you're doing some heavy modding or specific tasks, so feel free to save some cash there.
