I'm curious if anyone sees anything that seems overkill or if you have suggestions for better alternatives. I'm not really focused on aesthetics or noise as long as it's not too loud. Appreciate any advice you can give me!

If gaming is your aim, I'd suggest going with a 9800x3d CPU instead. It could offer you better performance for your games.
Honestly, you might want to skip the HDD altogether. These days, getting one big m.2 SSD is the way to go. If you really need additional storage, consider another m.2 or a SATA SSD instead.
