I'm in the process of rebuilding my PC for my new office setup and looking for some input on my choices. I'm not on a strict budget, but I want to get the best value for my money. Most of my parts will come from Micro Center, and I already have a PSU and an SSD picked out. I'm also planning to buy a monitor – the LG UltraGear OLED 45" 5k2k. I do casual gaming mostly, and while I don't need top-tier frames, I want to be able to play some simulation and city-building games comfortably, with 'Expedition 33' being one I'm particularly interested in. My main concerns are whether the Ryzen 5 7600X and a single 16GB memory module will hold me back, and whether it makes sense to buy two bundles just to upgrade to dual-channel memory or if I should go for the Ryzen 7 7700X bundle instead. What do you all think? Any feedback is welcome!

I recommend aiming for 32GB of RAM, especially for simulation games, as they can get demanding. Your other choices look good! By the way, if you're not super picky about the curved display, keep an eye out for a new 39" monitor coming out soon that might suit your needs better. Also, if you're really trying to save some cash, you could opt for a more affordable CPU cooler and maybe change your case if aesthetics aren't a big concern.
Even though your GPU may struggle at that high resolution, having more cores is beneficial for simulation games. If they're your focus, I suggest upgrading to the Ryzen 7 7700X. Plus, ditch the fancy cooler and get something like a Peerless Assassin for about $30 or a Phantom Spirit for a little more; they're quite sufficient for cooling that CPU. You could then use the saved money to snag another stick of RAM, totaling 32GB, which will definitely help with your game performance.
