I just got my 5070 Ti, but it only came with a 3 x 8-pin to 12-pin adapter, and I only have 2 x 6+2 pin connectors available. I've seen some GPUs come with 2 x 8-pin to 12-pin adapters instead. Should I buy one of those separately, or do I need to get a GPU that comes with an appropriate adapter included? My power supply is 750W.

It's better to go for a GPU that requires 2 adapters or uses 2 regular 8-pin/6+2 pin connectors. Avoid one that needs 3 connectors since that can create issues with overloads and potential fire hazards! There's a scary case where someone connected only two 8-pins from the same PSU cable, and it caused overheating. So, make sure your cables are well distributed to avoid that problem.
Honestly, there's not really an adapter you can buy that will help aside from getting a PSU capable of providing 3 x 8-pin or one that comes with a 12-pin to 12-pin. You can find a decent PSU out there for about $100.
You might consider upgrading to an ATX 3.1 PSU if that's an option, but make sure whatever you choose fits your system.
