I'm planning to upgrade my PC's RAM. Currently, I have one 8GB DDR4 stick and I'm thinking about adding two 16GB sticks. Should I leave the 8GB stick in the system, or would it be better to remove it and just use the two new 16GB sticks?

Definitely go with the 2x16GB setup and remove the 8GB stick. It will give you better performance and consistency.
While adding 24GB sounds good, mixing the 8GB with the new pairs can cause performance issues due to channel interleaving. You'll probably end up with slower speeds because of mismatched RAM. If 32GB is enough for you, just use the 2x16GB sticks. Avoid mixing RAM speeds if you can!
You should take out the 8GB stick for sure. Just the 2x16GB will be way better for your system.

Yeah, I've heard that can cause stability issues. Definitely stick with the matched pairs.
