I just upgraded from a 1080ti to a 5070ti, and I'm looking to do a clean install of the drivers using DDU. Should I run DDU with the old GPU still in my system, or can I use the new one? Does it even matter either way?

You should run DDU with the old GPU still installed. After it finishes the cleanup, it will shut down your PC, and that's when you can swap in the new card.
You could also just use Windows' generic video driver after you run DDU. Once that's done, plug in the new GPU, and then install the drivers for it. It's pretty straightforward either way!
Honestly, it doesn't really matter which GPU you have in when you run it. DDU will wipe all the old drivers, and then you just need to install the latest ones for the new GPU afterward.
It's generally recommended to do it with the old GPU. DDU has an option that lets it stay shut down after running, so you can swap to the new card after. Just keep that in mind!
It really depends on your preference. If you're swapping GPUs, make sure to disable WiFi and let DDU do its job. After it shuts down, unplug, switch out your GPUs, and then install the new drivers for the new card.
