I've been undocking my laptop without shutting it down for a while now, and it generally seems fine. However, the last time I did this, my laptop's motherboard seemed to fry unexpectedly. Is this just a freak occurrence, or is there a reason I should be shutting my laptop down before removing it from the dock? To give you some context, I'm using an EliteBook 850 G5, and it has one of those docking stations that clamps in place instead of just a corded connection.

No need to shut down modern electronics before undocking. They're built to handle these types of actions. But it sounds like yours just had a really unfortunate incident. Is there anything inside the dock or laptop that could have triggered that failure? If you got a new laptop of the same model, switching the hard drive and RAM should work fine. Just be cautious with that dock in the future.
In my workplace, we have over 400 laptops, and people are constantly undocking them for meetings without any issues. We switched to USB-C docks recently, and there haven't been any problems there either. So, your situation might just be a coincidence or maybe just some bad luck with that specific instance.
I've had some experiences with HP EliteBooks too, and I noticed some of the older docks had issues due to poor soldering on USB-C ports. It's frustrating when something like that leads to needing multiple motherboard replacements.
I don’t get why someone said it's okay and ended up getting downvoted. A reboot is always good for maintaining devices. Avoiding shutdowns might lead to problems down the line, though.
True, keeping a routine with regular reboots can really help keep things running smoothly. Might want to be cautious!
I’ve been in IT since the days of Windows Server 2003, and we never shut down laptops before removing them from docks, even the older clip-in types. USB docking stations are definitely safe to detach while the laptop is still on.

Sounds like it might have been a one-off thing rather than a common problem.
