I'm in the process of building a PC featuring the RX 7800 XT and I'm trying to decide between using an Intel i5-13600KF or an i7-12700KF. Alternatively, I've also considered going with an AMD processor. What do you think would be the best option for performance?

Going with an AMD processor like the Ryzen 7600X could give you great performance with the RX 7800 XT, especially in games. Just keep in mind, you'll need a compatible motherboard, so weigh that into your decision.
