I'm currently using an Ryzen 5 2600 with an RTX 2070 and 16GB of 3000MHz RAM, mainly playing games at 1440p. I'm considering upgrading to an R7 5700 and boosting my RAM to 32GB. What do you all think about this upgrade?

If you can, definitely go for the 5700X! It has double the L3 cache which can be a game changer for performance.
Make sure to check your motherboard’s website for the latest BIOS updates. Many boards that started with the 2000 series can be upgraded to support the 5000 series, but it's not guaranteed for all.
Consider the 5700X3D if your budget allows. It significantly enhances performance and is worth it for serious gaming.
Just as a heads-up, at 1440p, upgrading your CPU and RAM might not drastically improve FPS since your RTX 2070 could be the limiting factor. You might want to think about upgrading to a 3080 Ti or even something from the 40 series to see real gains.
The 5700X and even the 5800X or XT models offer a considerable upgrade over the base 5700. Depending on your gaming needs, even going for a 5600 or 5600X/XT could prove beneficial.
