What happens to my data if I remove a stolen MacBook from my iCloud?

I just had my MacBook Air stolen, which was syncing with my iPhone, and I quickly removed it from my iCloud account. I'm trying to understand what data is still accessible on the Mac. While I'm aware that they won't be able to receive my texts anymore, can they still view anything like old messages, contacts, or call logs? Thanks in advance for any help!

Removing the device from your iCloud basically gives the thief a clean slate to use it without restrictions. All your data still exists on the Mac unless it's been remotely wiped.
