I'm looking for a comprehensive tool that covers several IT needs: Antivirus (AV), Endpoint Protection Platform (EPP), Endpoint Detection and Response (EDR), Mobile Device Management (MDM), and Identity and Access Management (IAM). It should support multiple operating systems like Windows, Linux, and Mac, and be capable of managing over 3,000 users altogether.

Intune is definitely a solid option for managing devices, although it doesn’t cover everything in one package. It's worth checking out, especially since it integrates with other Microsoft products.
Workspace ONE can handle a lot of those functionalities, but don’t expect a magic bullet that does everything all in one go. Most vendors layer different services together to meet those needs.
Microsoft's suite of tools might be your best bet. Products like Intune for MDM, Entra for IAM, and Defender for EDR work well together, but they aren't fully unified as a single tool per se.
N-Able seems to provide a bit more of what you're looking for, covering many of those categories.
NinjaOne might not cover everything as a complete tool, but it offers RMM and MDM with various integrations like Bitdefender to help manage your IT needs under one roof.
