I just built a new PC and want to use my old HDD for extra storage. The PC came with two spare SATA data cables and has extra male SATA power connectors. I've read that I need a female to female SATA power cable to connect my HDD, but I'm concerned about compatibility with my PSU. What should I look for in a SATA power cable to ensure it works with my PSU? I'm pretty sure this is my PSU: https://www.amazon.com/Apevia-ATX-PR1000W-Certified-Connector-Compliance/dp/B0BTK87TBN. Any advice would be appreciated!

You don’t actually need a female to female SATA power cable. SATA power cables connect directly to your drives with a male end. Just make sure to utilize the existing male power connectors—you'll be fine without buying anything extra!
Your PSU already has 5 SATA power cables so you likely don't need any extra cables. Just find the existing cables coming from the PSU and use those to power your HDD. You should be good to go as long as everything is connected properly!
