I accidentally took out the small blue tab next to my GPU while trying to remove it. Does this mean I've broken something? How do I safely take out the GPU without further issues?

It sounds like you might have broken the PCIe slot tab, but don't worry too much. I've accidentally broken a few of those and never faced any major issues. Just lift the GPU straight out now and you should be fine. If you're ever in doubt, trying searching online for similar problems can really help!
We could really use a picture to assess what happened, but if you're just talking about the tab, it shouldn't be a huge deal. If it’s truly just the tab that came off, your GPU should still work fine!
