I'm looking for ideas on what to do with older computers that aren't compatible with Windows 11. We want to repurpose them for uses like digital signage. Since we need to adhere to ISO 27001 for security, we're primarily using Intune for management. Any suggestions?

If you need to use them for digital signage, look into LTSC 2019—they're good for another three years. Alternatively, you could install ChromeOS Flex which will still be supported for a few more years!
I’d vote for Windows 10 LTSC 2021 or a Linux option like Debian. If you’re concerned about Intune management, I get it; it's pretty clunky. But remember, there's no need to shell out for new hardware if you can securely repurpose what you already have!
Honestly, I've seen a lot of these old machines just go to e-waste. Unless you have specific needs, it makes sense to recycle them. Keeping unsupported devices in a corporate environment is risky unless there's a pressing dependency.
We're giving ours away for about $25 each, or we're using them for Linux projects. Honestly, I’d stay away from the old Surface models; they’re not worth the hassle.
If the machines are still decent, consider selling them internally for cheap. Any old machine that ran Windows 10 should be able to handle a Linux distro without any issues. Just keep them off the network.
