I've been using a GTX 1660 Super for quite some time and I'm thinking about upgrading my entire setup. I'm looking for a brand new graphics card that performs well for 1080p gaming, and my budget is around $600 or less. I'm open to both AMD and Nvidia options. Any recommendations?

Check out the B580! It's still one of the best budget cards on the market, and 1080p gaming is pretty easy these days!
If you're mainly focused on 1080p gaming, consider going for the RTX 5070. It's a great choice for your needs right now!
Honestly, I've been liking the RTX 4070 and RTX 5070 for max settings at 1080p. They should serve you well!
For 1080p gaming, your CPU can really limit performance. What's your current setup? Since you mentioned 1080p, I assume you're after high refresh rates too. Just checking, is $600 your budget for just the graphics card or the whole system?
Currently, I have an R5 3600x and I plan to upgrade it. My total budget for the build is $1100.
You might want to keep an eye out for the upcoming 9060XT. It could be a good option depending on its pricing. Just a heads up though, make sure your CPU can handle the new GPU so you don't run into any bottlenecking issues!
