I have a non-modular power supply with more cables than I actually need, and it's making everything really cluttered. I'm thinking about taking it apart to unscrew and de-solder the unnecessary cables. But I can't find much information on this, and most guides only seem to cover disconnecting the PSU from the motherboard. Any advice on how to handle this safely?

I would definitely advise against opening up your PSU. Those things can have some really dangerous capacitors that can deliver a nasty shock. Instead, consider using wire cutters to remove the extra cables and then securely cover the ends with connector blocks or electrician's tape. It's safer and you won’t risk damaging the power supply itself.
If you're sure you won't need those extra cables, cutting them off is an option. Just make sure to cover the cut ends properly to avoid any accidental shorts or shocks if you ever need to move things around. But yeah, opening the PSU isn't really the best idea.
